Baking Cake in a Sufuria!

Tonight was we celebrated Pauline’s birthday. She’s turning 16 and Shem and I decided to bake a cake… with no oven. We had a jiko and a sufuria and some hot coals to work with. We didnt even have a recipe, but with the ingredients I had on hand I just made something up…

2 cups flour

1/2 cup sugar

1 banana, mashed

1 tsp cinnamon

1 tsp vanilla

1- 1 1/2 tsp baking soda

1- 1 1/2 tsp baking powder

1/2 tsp salt

2 eggs

1/2 cup oil

1/4 cup water

I mixed all the wet ingredients together and all the dry ingredients together. Then combine everything in one bowl, stirring until well mixed. Then we greased the sufuria, poured the batter in, and stuck it on top of the jiko, putting hot coals on top and underneath. For the coals on top we fans them constantly to keep them blazing hot so as to get even heat on the top and the bottom. The result? Really good banana cake and we learned a new way to make it!
